Sort of Mexican, but not
This was a fluke, as are most things I cook. Basic delicious food is always what I look for when making a meal.
As you're probably learning with my recipes that there isn't exact quantities or measurement, no great cooks I know measure anything. It's all about tasting as you go and instinct and this is how I believe the greatest meals are made.
From memory...this is how I did it.
SHOP IT:
mince meat - probably 500g but if you make more just adjust all the other ingredients
a couple of cloves of garlic
1 small onion
500ml Love and Bones Broth - Original or Beef
1/2 teaspoon of cumin1 teaspoon of sweet paprika
1/4 teaspoon of hot paprika (optional) you could also use fresh chilli instead
1/4 teaspoon of cinnamon and turmeric
the zest and juice of a lime
a cup of sweet potato cut into cubes
a handful of peanuts - toasted
1 cucumber diced
a handful of baby tomatoes cut up into quarters
some fresh coriander and spring onions
iceberg lettuce
COOK IT:
Start by frying off your onion and garlic on a medium heat
then add the meat and sweet potato and cook till they are starting to catch
add tiny bits of broth throughout the cooking to avoid the mixture burning in the pan and let the meat and sweet potato suck up the liquid
add your spices and cook them off - about 5 minutes
then the zest and a little of the juice of the lime
test for seasoning - salt and pepper
toast the peanuts and sprinkle with salt
wash the iceberg lettuce cups
once the meat in seperate and delicious and sweet potato is cooked add the tomatoes, cucumber, coriander, spring onions, toasted peanuts and the rest of the lime juice and serve in the lettuce cups
