The Broth Lady makes Ramen

I'm mildly obsessed with Ivan Orkin after watching an episode of my favourite show Chef's Table on the man himself Ivan Ramen (Netflix - Season 3, Episode 4) - watch it! 

It was the moment I realised there's other people out there who are as nuts about Broth and umami as me and better still he's a Jew!

So he has inspired me the Jewish Broth Lady to create my own version of a Ramen in his honour, not that I'd ever eaten or made a ramen before but after watching him it's all I wanted to eat.

All Ramen's start with an incredible gelatinous Broth - bingo! I just happen to make the best in town. Now to make up the balance of flavors I imagine one of Ivan's Ramen's would taste like. Remember I have no clue, but boy did my first attempt taste good!!!!

HOW THE BROTH LADY MAKES RAMEN - THIS SERVES 4

   

 SHOP IT:

1L of Love and Bones Broth - with a decent layer of fat on it

 

 my umami mix of flavours;

1 heaped tablespoon of crunchy good quality peanut butter

50ml soya sauce

1 garlic clove, minced

a small knob of ginger, finely grated

 half a mild chilli, chopped finely

1/2 teaspoon of either maple sugar or maple syrup

1 tablespoon of olive oil

the juice of one lime

 

1 heaped tablespoon of coconut cream

Ramen noodles

1 egg per bowl

sweet potato

carrot

peas

kale

spring onions

tomatoes

pork loin

COOK IT:

prep all your flavour for your broth in a mixing bowl and whisk them all together

 

heat the unflavoured bone broth in a pot until it reaches a gentle simmer

while this is happening, get your piece of pork loin, season with salt and pepper and cook in a very hot pan with a little butter, making sure it gets a crust on both sides then turn the heat off stick a lid or foil over it and let it rest. Once rested and just before serving slice it finely and pour the porky buttery resting juices into your Ramen Broth.

cook your eggs...I put cold eggs into a pot of cold water bring to the boil and then turn the heat off leave for 2-3 mins and then rinse under cold water. Peel and have ready for Ramen.

now put your flavour base into the broth, add cubed sweet potato and carrot and bring to a gentle simmer

once cooked add the peas and turn the heat off

slice your tomatoes in half and caramelize in a very hot pan on the side without skin - will only take a couple of minutes

cook your noodle per the packet instructions - My partner Max would prefer zucchini noodles and the rest gluten free rice noodles

finely chop the kale and spring onions

 

 to serve; in bowls add your noodles, raw kale, 1 egg cut in half (the yolk should be just cooked a little runny is good), 4 blistered tomatoes, 4 slices of meat, then ladels of your beautiful flavoursome broth and the veg in it, finally spring onions and a drizzle of olive oil.
