Baked Potatoes The Broth Lady's Way
This is my go to comfort eat...anytime of the year. Sweet, soft, melting potatoes cooked in broth and cream with a perfectly caramelised top. This is what dreams are made of.
SHOP IT:
3 large dutch creams or other waxy potato
2 large onions finely sliced
1 cup of whole cream
butter
seasoning
COOK IT:
pre-heat oven to 180c
fry you sliced onions in a little butter until golden
peel and slice thinly your potatoes and then layer them in a baking dish with caramelised onion in-between each layer
season each layer with a little pepper and salt
then mix the cold broth and cream together and pour over the potatoes
and then finish with the last of the onions and dot the top of the dish with butter
place in the pre-heated oven bringing the heat down to 160c and cook until its bubbling and golden on top, the liquid has reduced and a knife goes through the potato easily
this should take about 45 mins
serve with a crisp green salad and steamed greens
